Halloween with Chef Egg

My name is Chef Egg and I want to give you the skills you need to succeed in the kitchen. Quality cooking skills will make you a productive, healthy and $$$ wise student. When it comes to Halloween, things can get a little wacky with lots of late nights and bags of sweet candy. Keep your holiday healthy with this simple guacamole recipe. You can smash up some avocados with fresh vegetables or add a couple of spoons of salsa. Finish it off with some mild or strong crumbled blue cheese for a grody, moldy touch. I like to serve this terrifying treat with baked cheddar tortillas or bakes pita chips.

Grody Mold Guacamole

2 Avocados
1/3 C Onion, diced
1/3 C Tomato, diced
1/4 C Cilantro, chopped
1-2 tsp.  Jalapeño, minced
1 Lime, juiced
1 tsp.  Hot Sauce
1/4 C Blue Cheese
Salt and Pepper
Place all of the ingredients into a bowl and smash together to combine. Garnish with a little extra blue cheese. Keep  refrigerated until you are ready to eat.
* You can add 1/2 cup of prepared salsa in the place of onion, tomato, cilantro and jalapeño.
 

Toasted Cheddar Tortillas

4  Tortillas, sliced into 8th’s
1 tbsp.  Oil or Spray Oil
1/2 C Cheddar Cheese, shredded
Salt and Pepper
Pre heat the oven to 350 F. Lightly grease a large baking sheet and place the tortillas on the sheet. Sprinkle the cheese over the tortillas and then season with salt and pepper. Place the tortillas into the oven and bake for 13-15 minutes or until golden brown. Carefully remove the tortillas from the oven, remove from the tray with a spatula and let them cool before eating.
